Southern Fried Potatoes and Onions are my family’s favorite country cooking side dish. These fried potatoes are easy to make and so darn delicious.

Okay, I have shared enough of my Cast-Iron Skillet praise.
Southern fried potatoes and onions can be cooked in a non-stick skillet with a cover. However, I use my seasoned cast-iron skillet with a clear glass cover and it works perfectly.
How To Make Fried Potatoes
Add a quarter cup each of vegetable oil and real butter to a 10 or 12-inch skillet (need a lid) over medium-high heat.
As soon as the butter melts add the potatoes and top with chopped onions, salt, and pepper. Just a pinch or two, don‘t go crazy! You can always add more seasoning later.
Cover with a lid and cook for 10-minutes. Try not to peek, okay. The only reason to peek is if you think the heat is too high and need to lower, some stovetops run hotter than others.
Psst: Covering makes the potatoes steam, and therefore this recipe is creamy and fried delicious!
Remove cover and flip the potatoes to cook a bit on the other side with the lid off. They should be fork-tender.
Keep cooking until you get golden brown that makes you happy then remove from heat.
Adjust seasoning and serve!

In the blog post, I do mention if the heat is too high, you need to monitor. It would have to be on a very high temp to burn. Is your pan thin? I am sorry your potatoes did not work out. I suggest adjusting the heat.
I sliced the potatoes night before and covered them in cold water with plastic wrap on top, dried the slices next morning. I then followed recipe exactly as written. did add chopped green pepper along with onion. First time EVER I made perfect fried potatoes! Extra bonus is they are my homegrown yukons. These are PERFECT! Thank you!!
Followed recipe exactly. I cut slices night before and put in bowl of water in fridge. I dried them next morning. aI I did add chopped green pepper as suggested along with onion. This first time my potatoes were perfect! An extra bonus is they home grown Yukon from my garden. Great recipe Pam and I’m 73 and never made them as should be
