What’s For Supper? #114

Happy Monday! Can you believe another week of making dinner? I mean, who knew making dinner was going to be such a significant time burner in our adult years?

This week I am jazzed for some homemade peanut butter cookies. I liked to stack them up and serve them along with a few scones and some berry jams for a momma style afternoon tea.

I am finally close to finishing with the packing of the Christmas, which takes so much longer than I ever expect each year. Thanks to my super helpful husband, or I would probably be knee deep in Christmas all year! I was so busy during the holidays that I never actually posted my Christmas Decor! Here is What’s For Supper!

Exploration MondayBlack-Eyed Pea Soup from Jen from Veggie Inspired. This recipe is filled with yummy vegetables and if you are not on team collard greens, just toss a big handful or two of clean raw spinach leaves right before serving. Recipes, especially soup, are not carved in stone! They are an invitation of comfort and open to interpretation of what you LOVE in a wonderful soup. Going to serve it up with a big skillet of cornbread.

Take Out Tuesday – Whole Roast Chicken from the local deli, a big green salad and my favorite company is Coming Green Beans. There will be leftovers for one meal at least!

Wacky WednesdayTurkey Joes billed on grilled slices of cornbread (make a little extra, cornbread is more versatile than you think!!) with Broccoli Slaw, and leftover peanut butter cookies for dessert. Carrot sticks for anyone feeling picky this week!

arkansas cucumber radish and mint salad recipe

Lean and GreenSimple Chicken Breast with a drizzle of balsamic glaze with my yummy Arkansas Cucumber and Radish Salad.

Fishing FridaySimple Pickle Relish Tuna over Lettuce greens for this gal and toasted pumpernickel bread for the boys with Wickles Pickles (I am so obsessed) and sliced tomatoes.

Saturday – Dinner Out – A girl has to go out and explore once in a while. I am thinking Veggie Burgers with Curly Fries. Yum! Hummus and veggies sound pretty good as well.

Sunday Familly Dinner – Kids or the guys will pick, so probably Pizza!
