Are you looking for some dinner ideas for the end of the shool year? Too busy to cook? How about some simple recipes for busy families this week? Hey Momma What’s For Supper #83 has some great ideas to save you time and get supper on the table with a smile on your face and less complaining from the kids. Okay, maybe that is impossible. But no worries, I share our family’s weekly meal plan to get your creative dinner ideas flowing to plan your menu for the week!

 

Meal Plan for the Week

The Perfect Grilled Ribeye SteakSunday – Steaks on the grill with Spicy Funeral Potatoes and Arkansas Cucumber Salad.

Our Ribeye Steak recipe for the gas grill is amazing! Jazz it up with a homemade marinade or just keep it simple with some salt and pepper.

Spicy Funeral Potato Casserole can be made the day before, just store it in the fridge overnight. Take it out and bring to room temperature then bake as directed!

Arkansas Cucumber Salad with Mint is refreshing and a perfect side dish to compliment the ribeye steaks and spicy, cheesy potatoes.

Monday –  Leftover Steak, Annie’s Organic Macaroni, and Cheese and steamed broccoli.

Tuesday – Slowcooker Pork roast with Vegetables

I love a one pot meal! I will also have some watermelon chunks and strawberries to serve. Yum!

Crispy Roasted Salt and Pepper Chicken Thighs

Wednesday – Salt and Pepper Crispy Roasted Chicken Thighs, Garlicky Fried Spinach, Tropical Coleslaw, and Texas Garlic Toast

Salt and Pepper Chicken Thighs are a new recipe on the blog and are so kid friendly! With just two ingredients plus the chicken, even your picky eater will have to think before he stomps his foot and asks for chicken nuggets… AGAIN.

Garlicky Fried Spinach is another super fast dish for busy nights I make often. It is simply some olive oil, fresh spinach, and minced garlic with some salt and pepper stir-fried in a big skillet. I love having the leftovers with fried eggs the next morning!

Tropical Ambrosia  Coleslaw is yummy! With crunchy slaw, fruit, and nuts it is a family favorite.

Texas Garlic Toast can be store bought or make it at home and let the kids help. I mix soften butter with garlic powder and that is it! So simple! Slather it on Texas-sized toast! You can also grill this bread, which is a real treat. Use a stove top grill like this one. Non-Stick Stove Top Grill/ Griddle

Thursday – Leftovers! Busy Mom Favorite! We will have a little bit of everything and a salad.

I love a nice side chopped salad each week to use up the remaining fresh vegetables in the fridge. For some reason, it just feels so fancy to have nicely diced vegetables mixed with great chopped lettuce tossed in olive oil and lemon juice. Yum!

Friday – Dinner Out

I keep a nice list of new restaurants in our area so that we don’t end up eating the same things each weekend for our special night out! I am hoping to hogtie my husband into taking me to see POMS! I know it is going to be tough, a chick flick is hard enough, but and older-lady chick flick is going to be like pulling teeth without the novocaine.

Smokey Chipotle Salsa

Saturday – Sheet Pan Fajitas with Guacamole, and Chipotle Salsa

I love a simple dinner using one pan! I believe busy moms out there all know their one-pan-dinner dance.

Sheet pan chicken fajitas are so good!  This recipe is just magic! The picky eaters can rejoice because moms can artfully make sure the chicken is NOT touching any vegetables. You might try allowing the little ones to put some chopped ripe avocado or even bananas pieces in their fajitas! When dinner is made at home the kids are free to explore their palate without any judgy types giving you the eyer roll.
