Happy Monday!

I can’t believe the new week is already here! We are just about ready to start school this week. I want to “convince” my teenage son that a great way to start out a new year is a tidy room and clean laundry.  He, however, wants to get every drop of fun in the sun and video game time he can before that first school bell rings.

And that is fine by me.

We struck a deal, chores before gaming and laundry before bedtime. Having a teen simplifies things just a little because they can stay up longer!

Teens in the Kitchen

Part of teaching a kid to be self-reliant is learning to shop for fresh fruits and vegetables.

Therefore, part of our menu plan this week involves a teenage picky eater who thinks steak is its own food group is planning two meals.  The only rule was it had to be fresh food not frozen. So yep, Steak is one the menu and my newest recipe Southern Fried Chicken Tenders. He wants to make his own dipping sauce for both and I am so happy to see my teen get creative in the kitchen!

Speaking of teen cooks. I ordered two cool cookbooks for our teen to browse for recipe ideas. Our focus is on good food with real ingredients.

Monday –  (Teen Pick) Grilled Ribeye Steaks, Greek-Style Potatoes, Sliced Tomatoes, and Grilled Bread

If you don’t want to heat an outdoor grill, you must grab this Nordicware Grill/Griddle! It is perfect pancakes and equally perfect for small grill recipes. I use it all the time for grilled cheese and grilled chicken tenders and bread.

Tuesday – Slow Cooker Chicken Thigh Carnitas in Flat Out Bread with all the fixings.

We are making Carnitas raps using Flat Out Bread. I am adding shredded lettuce, chopped tomato, and shredded cheddar cheese.

Wednesday –

Back To School and a birthday dinner out! Yep, it’s a double celebration! I am looking forward to celebrating another year lived and more to look forward to, as well as my youngest son’s sophomore kick-off!

Thursday –  Turkey Dogs, Baked French fries, and fresh bing cherries.

I love a good hot dog, and we buy amazing nitrate-free turkey dogs at our local Sprouts.  I will cut up some fresh white potatoes and toss them in olive oil, bake until crispy on the outside and tender on the inside. Then give them a dusting of garlic powder and cumin salt.  (I baked at 475 and put the rack as low as it can go in the oven)

Bing Cherries are almost at their season end and I am grabbing as many as I can get until they are gone. They are sweet, tart, and full of nutrients.

Friday – Southern fried chicken tenders, fried potatoes, sliced heirloom tomatoes.

This is our second teen pick menu, and he is helping to cook so hooray!

Our Southern Fried Chicken Tender recipe is superb and spicy. If you want extra heat, add cayenne pepper to the egg wash.

We are also making a big pan of creamy Southern Fried Potatoes and Onions. A double batch means we can serve them with fried eggs in the morning for breakfast.

This pairs well with freshly sliced heirloom tomatoes. They are fine just sliced and enjoyed. A real southern treat in my book.

The Best Family Meal Plan is DIY

Psst: No weekly meal plan is complete without at least one family DIY night. Everyone pitches in choosing their favorites for a big salad, sandwich or even a DIY pizza night. We love planning meals for our family weekly that allow freedom of choice and lots of fun. That is the best Seven Day Family Meal Plan in this momma’s book.

Saturday – DIY sandwich night. This gal will get her nails done and have a long coffee break away from the house. Self-care is the little things and the big things and this weekend I am playing self-care catchup.

Sunday – Picnic with the guys. Sub sandwiches, kettle chips, cold bottles of cola, and brownies.
