Happy Monday! This is our first full week of school. I hope if you have kids in school this week that you are hugging your slow cooker! Yep, I know everyone loves their Instant Pot. However, there is something so reassuring about knowing that slow cooker is working its magic and I am not babysitting it at all! I like a slow-cooked no-fuss meal at least once a week. It is a busy mom lifesaver!

We have nothing special planned for the long weekend. I am hoping to work in the spare room which will soon be a fun place for me to work on the blog and get back to my favorite hobbies in a larger space with MORE STORAGE! I am hoping to get on track for working on the room 30 minutes a day this week.

Busy Moms and Goals

Busy moms know that our projects often get put on the back burner… over and over again.  I am determined though.

One sure-fire way of getting things done is making a menu-plan. I make one each week and I will be honest if gets easier with practice.

I have a simple method to keep on track for menu-planning which I will be sharing on the blog soon.

Quick Tip For Menu Planning

However, the quick tip I can give today is to write everything down.

Write each element of each meal to gauge how much of an item you need to purchase at the grocery store.

Pretty simple!  And guess what!

Good planning means only one trip to the grocery store!  That not only saves you on gas and time but save you MONEY!

Here is our menu plan for the week!

Monday – Pork in the Crock-Pot! Woot!

Savory Pork Tenderloin with mashed potatoes and a nice gravy made from the broth in the slow cooker. I mean, I am almost dancing! Monday slow cooker days are the best. We will serve this tasty meal with southern style yellow squash and onions, and salad greens with a nice mustard vinaigrette.

My youngest son proclaimed with gusto in the car Friday, that we eat to much chicken. Well, my husband only eats turkey and chicken and occasional fish, so it goes without saying, we do eat a darn lot of chicken. I will welcome dad to the cupboard for a nice peanut butter sandwich so my (deprived) child and I can enjoy some tender pork and potatoes.

I have tons of melon and pears from our farmer’s box to eat up so that will be a treat.

Tuesday – Turkey Tacos

We love Taco Tuesday around this house. As a matter of fact, it’s my favorite meal to triple batch cook and piggyback.  I cook a triple batch of taco meat and freeze two portions. The following day we have a hotdog bar and use all the taco fixings on amazing hot dogs! I just grab some mustard, relish, and ketchup, and sometimes already have sliced cucumber from lunches to add to the hotdogs.

When I am busy I use this amazing spicy taco mix! Simply Organic Taco Mix. I keep several of their packets in my pantry. You can add this mix to a pint of sour cream and two tablespoons mayo and make the most amazing vegetable dig!

Ground Turkey Tacos are amazing with shredded lettuce, chopped tomato, diced onions, farm-style shredded cheddar, and a hint of spicy taco sauce.  We serve with fresh guacamole and chips. I buy several packs of Trader Joe’s Taco Shells to keep in the pantry. So good!

Wednesday – Hot Dog Bar!

Yes, as mentioned in Taco Tuesday we piggyback or topping prep into a yummy DIY hotdog bar the next day! We will bake some fries and toss in olive oil and sprinkle with minced garlic for a yummy version of French fries we love.

Thursday – Crispy Baked Tilapia

Yes! Another meal that is not chicken! Let’s do a little polka to celebrate!

Tilapia is such a light fish, truly a good choice for kid-palates.  My kid ate it early on, even when the only thing he usually wanted was chicken nuggets and tater tots with some fish crackers. So yucky! I told him the tortilla crusted fish was California style chicken nuggets! He believed me and has been a tilapia lover since!

We are serving up an amazing melon salad recipe with the fish along with our favorite Oven Roasted Corn on the Cob!   This will be a really wonderful dinner! Day after hump day is looking up y’all. I like to call Thursday Weekend Eve.

Friday- Dinner Out

We are taking a  Caribbean break for a while although it has been fantastic. But mom and dad’s date night is officially on team Indian for the next few weeks. I really miss the amazing food at our local place. They know our family well! When we order Saag Paneer spicy, they give it a NUMBER 10 no problem. Same with the Tandoori chicken. I love the exquisite rustic flavors of Indian food. If you have not tried it, start with simple Chicken dishes with Naan and peas and cheese. When your palate is ready, go wild and crazy and ask them to add some heat.

Saturday – Crispy Chicken Thighs with Corn on the Cob

Even though our picky eater is “sick and tired of chicken, he loves my Crispy Baked Chicken Thighs. We are serving these up with tasty corn on the cob, baked beans, and an amazing melon slaw. 

Sunday-  Ribeye Steaks and Chicken On the Grill

We have a long weekend!

We will grill up some good steaks and chicken and I am going to enjoy a slow cooker baked potato and leftover Melon Slaw!
