What’s For Supper #101 Family Comfort Food

Each week we offer a simple menu plan with easy dinner ideas to get supper on the table and save busy families time and money! This is Hey Momma! What’s For Supper? #101! We are celebrating this week with family comfort food and enjoying family dinner together!

Happy new week! I am happy to say the sun is shining bright this Monday morning and the birds are chattering and the rabbits are braving the walkers in our neighborhood as they grab a snack of grass and an ocassional lemon they find on the ground. It is feeling like this week will be a good one.

We had a nice Easter here at Momma’s house. French Toast, Hashbrown Casserole, Fruits, and of coruse chocolate bunnies. It was a nice family time, but we sure did miss our usual Easter celebration. Times are just different now, it really makes you look back and appreciate all the Easters before this pandemic.

I hope this weekly meal plan finds you safe and healthy.

This is why I am whipping up all the family favorites this week for dinner. Each night we sit down together as a family is best part of the day. We are together, and at the end of the day that is my big why. My family is my why I do all the things I do every day, work, prayer, exercise, and eating well. My “why also includes self-care, which is essential now more than ever.

Here is our menu plan for the week:

Monday: Crispy Salt and Pepper Chicken Thighs
Country Cucumber Potato Salad with Sliced Apples

Tuesday: Taco/Burrito Bar with Chicken Carnitas, Mexican seasoned ground beef, and all the fixings.

Wednesday: Skillet Chicken Lasagna, with green salad and garlic bread.

Thursday : DIY Sandwich night with Soup

Friday: Tuna Salad with olives, on grilled sourdough bread with sliced tomatoes.

Saturday: Pizza and a Movie Night – We are grabbing our favorite local pizza and enjoying a movie together. — Movie Night is Onward on Prime Video.

Sunday: Meaty Meatloaf – which means I blend the peppers and onions to hide them from the picky eater. Serving this up with mashed potatoes, and tomato gravy. I think I will make up a pan of Smothered Green Bean Casserole, then I will have leftovers for Monday!
